Anyone know when the next update is out and what it will have?

Rumours say Dec 7th for Generation 2.
Yet to be confirmed though.

dec 7 as hugo said but people also think around 23, since they do updates on tuesdays

If it would be Dec 23, then it's probably because of the holiday event planned.
I heard there will be increase in rare Pokemon spawns.

There's supposed to be an announcement today (December 12, 2016) about Generation 2.
