You'd have to change it in the source code. Search for "VK_TAB", change it to one of the keys from here, then compile using Visual Studio C++ 2010 or above.

There's been an update to the game which unfortunately broke ScriptHook. Maybe someone will make an updated ScriptHook which you can replace the old one with some day.
